Goat Cheese Pesto Crostini

I almost didn't make this recipe but figured if people were hungry when they showed up, it'd be good to have more appetizers ready ahead of time and this one wasn't hard to make. Everyone LOVED it though. I hate to admit it but I trusted Ina Garten's pesto recipe and it paid off. There isn't anything special about it besides using another nut in addition to the pine nuts.

Ingredients:
Pesto
Goat cheese
1 loaf of bread cut in 1 inch slices

Pesto:
1/4 cup almonds (Sorry K!)
1/4 cup pignolis
9 cloves of chopped garlic
5 cups fresh basil leaves, packed
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 1/2 cups good olive oil
1 cup freshly grated parmesan
Throw all of this into a blender and then drizzle in olive oil. Ta da. 


Directions:
Toast bread and then let cool. Spread goat cheese and then a layer of pesto.
