1 large daikon radish, peeled and inspiralized on smallest setting
1/2 cup almond butter
3 Tbs soy sauce
1 Tbs honey
1 Tbs lime juice
1 tsp sesame oil
1 Tbs water
salt and pepper
1/4 cup almonds, chopped
3/4 cup chopped scallions, green and white parts
Make the sauce by adding the almond butter through the salt and pepper to a food processor or blender.
Saute the daikon noodles. Turn off heat and toss with sauce. Mix in scallions and top with almonds.
