5 1/2 in thick pork medallions (I cut a tenderloin into these pieces)
Sauce:
3 Tbsp Lime Juice (I used zest and juice of 1 lime)
1 Lime, Zest
1/4 cup Extra Virgin Olive Oil
1 Tbsp Raw Honey
1 tsp Apple Cider Vinegar
1 Shallot, Minced
2 cloves Garlic, Minced
1/4 cup Cilantro
3/4 tsp Onion Powder
1/4 tsp Chipotle Powder
1/2 tsp Chili Powder
1/2 tsp Sea Salt
1/4 tsp Black Pepper
Combine sauce ingredients in a blender.
Salt and pepper pork. Saute 1-2 minutes on medium to high heat on each side. Add sauce to the pan. Cook another 3-4 minutes. Serve.
Notes:
Really good. I added extra chili powder.
