1 tablespoon butter
2 cubed apples
3 tablespoons cider vinegar
2 teaspoons minced peeled fresh ginger
1/4 teaspoon salt
1/8 teaspoon ground allspice
1/8 teaspoon cinnamon
Pork:
3/4 teaspoon ground chipotle chile pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon ground coriander
1/4 teaspoon black pepper
3 boneless center-cut pork loin chops, trimmed (I always brine mine also)

Heat butter on low in a saute pan. Add apples and cook for about 4 minutes. Add remaining ingredients to pan and continue cooking on low heat as pork chops cook.
While apples are cooking, mix spices for pork chops together. Pat dry pork chops and cover in spice mix. Add to a hot grill pan. Cook until internal temp is 145. (Took about 5 mins per side on the thicker chops we had).
Add remaining ingredients to apples and continue cooking on low heat as pork chops cook, stirring occasionally.
Notes:
Loved this recipe and will use it on chicken as well.
Original recipe called for 3 Tbs of brown sugar. I thought the apples were sweet enough that it wasn't necessary.
