Mini Cheesecake Bites

Ingredients:
4 graham crackers crushed
2 (8 ounce) packages cream cheese - ROOM TEMPERATURE!
3/4 cup white sugar
2 eggs
1 teaspoon vanilla extract

Directions:
Preheat oven to 350. 
Beat cream cheese, vanilla, and sugar until there are NO LUMPS. (I used the dough hook on the food processor to make sure.) Then add eggs one at a time to combine but do not overbeat. 
Fill a mini muffin pan with mini liners. Add 1/2 tsp of crushed graham crackers to the bottom of the of each. Fill to top with cream cheese mixture. 
Cook for 15 minutes. 
Makes 4 dozen.

Notes:
That's the basic recipe and you can jazz it up. I topped the first dozen with some cherry pie filling. The next dozen I added a couple chocolate chips before adding the cream cheese and melted some chocolate chips with butter in the microwave to drizzle over the top. Last 2 dozen I added crushed peanut butter cups. On top I put a drop of peanut butter and marbled it with a tooth pick.
