Sauteed Chicken with Apples and Onions

Another apple recipe...

In college, a friend of mine had shown me this recipe that her mom makes with pears, apples, onions and pork chops. I was in the mood for chicken so winged this recipe and it came out really well.

Ingredients:
3 apples, peeled, cored, and sliced
2 tbs butter
1/2 white onion sliced
1 lb of thinly cut chicken breasts (the pack I bought had 5)
3/4 cup chicken broth
1/4 cup apple cider vinegar
Salt and pepper


Directions:
Season chicken with salt and pepper and saute it in a hot saute pan, a couple minutes each side so that they brown. If you don't do this original sear your chicken may get a soggy when braising later on. I didn't have a pan large enough so I did it in 2 batches.

Put chicken on a plate and add butter to the pan. Add the onion and apples. Saute until the onion slices are lightly caramelized and the apples have begun to soften, about 8 minutes. Stir in liquids. Return chicken
to the pan.

Cook another 5-7 minutes until chicken is cooked, turning halfway through and covering with the apple and onion mixture. Because I didn't use thicker chicken or pork chops, the protein was done well before the sauce had reduced enough. I put the chicken on a plate, turned up the heat on the pan, and added a tablespoon of flour to thicken. Cooked for another couple minutes and poured over the grilled chicken.
