Drunken Noodles

This actually tasted a lot like Thai take out, surprisingly, but did not make me feel as gross.  It was pretty quick to cook.  We got stuff at Hong Kong market in Chinatown for really cheap (the noodles were <$1).  If I had to guess all the ingredients were <$10-15...if you don't have someone like A eating it I think it would serve 3-4 people.

Ingredients:
8-10 oz flat rice noodles
1 Tbsp. fish sauce
2 Tbsp. black soy sauce
2 Tbsp. Golden Mountain sauce or light soy sauce (just used regular soy sauce)
1 – 1.5 Tbsp. chili paste
1/2 Tbsp. sugar (think brown sugar would be better, maybe a little more of it)
2 Tbsp. canola oil
6 garlic cloves, minced
1 bell pepper, cut into strips
1 - 1 1/2 chicken breasts, cut into bite sized pieces
1 large plum tomato, cut into 8 wedges
1/4 cup Thai basil leaves
1/4 cup sliced green onion

Cook the noodles according to package directions, stirring so they don't stick together (the noodles I got you just had to soak them, not boil them).  Cook them so that they're still firm...so that they absorb some of the sauce later.

For the sauce, stir together the fish sauce, black soy sauce, other soy sauce, chili paste and sugar.  Set aside. 

Heat oil and saute the garlic for a minute until fragrant.  Add the pepper and chicken and cook until the chicken is about halfway done, about 2 min.  Add the sauce and cook until the chicken is done, then add the noodles, tomatoes, green onion and Thai basil.  Stir around and cook a little bit more so the noodles absorb some sauce.

  1. I resent the comment "someone like A". K is a weenie.

    In the future, I think we should add egg and cook the noodles with everything for a little longer.

    Thai basil is a wonderful thing.
