Cold Ramen with Shrimp

Whole Foods' crab was $45 for a little tin so we went with shrimp instead.  You could probably do shredded chicken instead?  The tomato sauce has to be made in advance so it can chill in the fridge.

Ingredients:
1 onion, chopped
1 garlic clove, smashed
Canola oil
2 cups chopped tomato (about 2 tomatoes)
2 cups ramen, cooked
1 cup baby arugula
6 Tb soy sauce
4 tsp sesame oil
some chili paste -- this wasn't in the recipe but it was a good addition
1 1/3 cups crabmeat or shrimp or something

Cook the onion and garlic in oil over low heat until soft.  Add the tomato and cook for 15 min until they are cooked down and most of the water is gone.  Let it cool a few minutes and puree in the food processor.  Put it in the fridge for several hours.

Once it's cooled down combine everything in a bowl and eat.
