Mushroom Quiche

This is a Julia Child recipe but I changed some things based on what I had.

Buy or make pie dough


Ingredients for the quiche:
1 1/2 cups half and half
3 eggs
pinch of nutmeg
some pepper
1/4 cup grated Swiss cheese
1 Tb butter cut into pea-sized dots

1 lb mushrooms, sliced
1/2 onion, diced
3 Tb butter
1 Tb lemon juice
2 Tb white wine

Beat the eggs, cream and seasonings in a mixing bowl.

Cook the onion in the 3 Tb butter until translucent.  Add the mushrooms, some salt, the lemon juice and the wine.  Cover the pan and cook for awhile (the book says 8 minutes, I have no idea how long I cooked them for).  Uncover and turn up the heat until all the liquid boils off and the mushrooms are sauteing in the butter.

Add the mushrooms to the egg mixture, pour into your partly baked pastry shell and sprinkle with the cheese and dots of butter.  Bake for 25-30 minutes in a 375 degree oven until the top starts to brown.
