Easy beef stew (tonight's dinner)
1 lb or so of beef for stir fry (I buy at Whole Foods)
1 yellow onion
bunch of carrots
4-5 red potatoes
1 large can of italien peeled tomatoes
sage, thyme, savory
brown beef in olive oil. remove from pan. saute chopped onion. quarter potatoes and slice carrots. Cook both until soft.
Stir beef, potatoes, carrots, tomatoes together and add salt and pepper and herbs. add chicken broth or beef broth to cover.
cook on and off over low heat for several days. serve w/green vegetable. eat.
Pressure cooker version
I didn't cook over a few days and we were hungry, so we made this version in the pressure cooker and served it over wild rice with some bread.
Ingredients:
Olive oil
6 slices of bacon
2lb of "stew beef" or beef cubes
3 yukon gold potatoes
3-4 carrots
(1-2 yellow onions -- I forgot these but they would be delicious)
1 package white button mushrooms
1/2 can tomato paste
1 can of dark beer (we used stout)
Chop the potatoes, carrots and mushrooms into bite sized pieces and set aside.
Chop the bacon into bits and cook it in some olive oil over medium-high heat until it is crispy. Remove the bacon with a slotted spoon and set it aside. Add the beef to the oil and bacon fat and brown.
Add the potatoes, carrots, mushrooms, beer and tomato paste and cover, cooking under pressure for 10 minutes (one ring of pressure). Turn off the heat and let the cooker lose pressure slowly instead of letting the steam out quickly. Serve.
