Ginger Scallion Crusted Chicken

Ingredients:
2 pounds boneless, skinless chicken breasts
1/2 cup coarsely chopped scallions
2 to 3-inch piece fresh ginger, peeled
Salt and freshly ground black pepper, to taste
2 tablespoons olive oil
1/2 cup almonds, coarsely chopped


Directions:
Brine chicken for about 2 hours (not critical). Preheat oven to 400 degrees. Bake chicken for 10 minutes.

While chicken is in the oven, combine the scallions, ginger, garlic, salt and pepper in a food processor or blender. Pulse a few times to combine. Add the 2 tablespoons olive oil to the food processor and process into a paste.

After 10 minutes, coat the top of the breast in the ginger scallion paste. Press chopped nuts into the top. Cook for an additional 7 minutes.

Notes:
I don't really like ginger but John does so he loved this recipe. An easy alternative to the usual grilled chicken.
