Truffle Mac and Cheese

Ingredients:
4 tsp white truffle oil (not black), divided
1 lb pasta
1/2 lb grated Parmesan
1 lb grated sharp cheddar
3 cups milk
1 stick butter
1/2 cup flour

Directions:
Melt butter in a large sauce pan or dutch oven over medium heat. Add flour and whisk until browned and smooth (about 5 minutes). Slowly add the milk and continue whisking. When all of the milk has been added, turn the heat up to medium high and continue stirring until it begins to bubble, then reduce heat to a simmer and and continue stirring until it thickens (about 7 minutes). Add cheese and stir until thoroughly combined. Add 2 tsp white truffle oil to sauce.

Cook pasta 2 minutes less than suggested in salted boiling water and toss with 2 tsp white truffle oil. Add to cheese mixture.

Bake at 350 degrees for 25 minutes. Let rest 5 minutes before serving.  I like the burnt bits on the top so I put it under the broiler for a minute.
