Thai Red Curry Meatballs

INGREDIENTS
For Meatballs
1 lb ground turkey
4 green onions, chopped
¼ cup chopped cilantro
1 tbsp fish sauce
1 tbsp red curry paste
1 egg
chili flakes, salt and pepper to taste
EITHER: 1 cup breadcrumbs
OR (gluten free alternative): 2 tablespoons warm water, 1/2 teaspoon cream of tartar, 1/4 teaspoon baking soda
For Sauce
1 tbsp sesame oil
1 can coconut milk
1 tbsp red curry paste
2 tbsp nut butter (peanut, sunflower, almond)
salt and pepper to taste
chili flakes to taste, I used a lot


Combine meatball ingredients. If making gluten free meatballs, combine water, cream of tartar and baking soda in a separate bowl so that it's bubbling and dump into meatball mixture. If making regular version, mix in breadcrumbs. Bake at 375 for 30 minutes. 

To make sauce, heat sesame oil in a pan and add coconut milk. Let cook for a minute and add remaining ingredients. Add meatballs to sauce to coat. 

I served over cauliflower rice (1/2 head of cauliflower grated using the food processor and fried in a wok for a couple minutes) but you can use anything as the base - rice, pasta, mashed potatoes. 

Garnish with chopped cilantro.
