Roasted Potatoes

Ingredients:
3 potatoes (sweet or white), cubed
1 red onion
2 red peppers
1 Tbs chopped fresh thyme
2 Tbs chopped fresh rosemary
1/4 c olive oil
2 Tbs balsamic vinegar
Salt and pepper

Directions
Combine olive oil, vinegar, and fresh herbs in a bowl. Toss with cut vegetables.

Roast for 45 minutes, stirring every 10, in a 450 degree oven.
