Mexican Burgers with Red Pepper and Avocado Hash

Ingredients:
Burgers:
1 lb buffalo (or ground beef)
1 (6oz) can of green chiles
½ teaspoon paprika
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon chipotle red pepper (or chili powder)

Toppings:
1 package mushrooms
1 red onion, thinly sliced
½ 14oz jar of roasted peppers, sliced
2-3 tablespoons coconut oil
¼ teaspoon chipotle red pepper or chili powder
½ teaspoon red pepper flakes
salt and pepper, to taste

Avocado Roasted Red Pepper sauce:
1 avocado
½ 14oz jar of roasted peppers, sliced
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon black pepper
¼ teaspoon salt
½ lemon, juiced

Directions:
Heat a skillet pan, add a little bit of fat, and slowly saute your toppings. Let these cook down for a while on a low heat. 

Make your burgers by mixing all of the burger ingredients and form some patties. You can either make sliders or I made 4 burgers. Heat a cast iron pan and cook those guys. I like my burger to have a crust on the outside while pretty rare on the inside so I got the pan nice and hot and cooked for about 6 minutes each side. 

Make your sauce by throwing all of those ingredients into a food processor and let it go until it's nice and creamy. 

Stack them up. Burgers, sauce, toppings and devour. 

Notes:
Ingredient list looks long but most of the things I had already and it takes very little prep besides cutting the toppings. And this was very very delicious.
