Mexican Chicken Casserole Over Cauliflower Rice

I was starving this afternoon but didn't want to go out in the rain to get food so I called Matil and we put this together.

Ingredients:
1 can of chicken, drained
1/2 jar salsa
1/2 cup of corn
1/2 lime juiced
1/4 cup of cheese
1/2 head of cauliflower
cilantro
chili powder
salt and pepper

Directions:
In an baking dish combine chicken, salsa, corn, lime juice, and top with cheese. Put in toaster oven set to 450 degrees for 10 minutes.

While that's baking, grate 1/2 head of cauliflower in a food processor. Add to a hot pan. Add cilantro, chili powder, and salt and pepper to taste. Cook until browned.

Serve casserole over rice.

Notes:
If I had black beans or onions to saute, I would have added those. Tortillas on the bottom of the casserole would have been nice too.
