Steamed Fennel, Onion and Cod

This is really easy to make quickly on a weeknight.  I try to think of meats that steam like fish so that C would like it.

Ingredients:
Fennel bulb, sliced
1 large yellow onion, sliced
3/4 lb cod or other fish, cut into three 1/4 lb pieces
4 cloves garlic, sliced
Handful of parsley leaves, chopped
Salt and pepper
Olive oil
Lemon juice to squeeze when done

Preheat the oven to 400.

On three sheets of parchment paper, put 1/3 of each of the onion, fennel and garlic slices on top of a piece of fish.  Season with salt and pepper and 1/3 of the parsley, then sprinkle with olive oil.  Fold the parchment paper up and then fold over the edges to create a sac.  Twist the ends of the paper around and tuck them under the sac, and place in an oven-safe pan in case there are leaks.  Cook for 20 minutes.  Squeeze some lemon juice over the opened sacs and serve.
