Irish Soda Bread Muffins

To carb up for our day long drinking marathon, I decided to bake some muffins to bring over to Jill's for brunch.

Ingredients:
¼ C Crisco
½ C Sugar
1 Large Egg
1 ½ C Sour Cream
2 ½ C Flour
2 tsp Baking Powder
¾ tsp Baking Soda
1 tsp. Salt
1 C Raisins

Directions:
Combine Crisco and Sugar until well blended. Add egg and mix until it smooth and looks pale yellow, about 3 minutes. Next, add sour cream until well blended.

Sift Flour, Baking Powder, Baking Soda and Salt and blend, add to above mixture until blended, don’t over mix. Lastly, add the raisins.

I used a two spoon to fill 15 cups.

Bake for 20 min, just until some browning occurs.


Notes: These resembled Irish soda bread but weren't a ringer. Pretty delicious though.
