Ingredients:
1 chicken breast cut into chunks
1 clove of garlic, smashed
1 ripe pepper, julienned
2 ripe tomatoes
Olive oil
White wine
Salt and pepper
Directions:
Cover the bottom of a pan with olive oil and turn the heat to medium-high. While the oil is heating, cube a chicken breast and season with salt and pepper. Once the oil is hot enough that a drop of water would cause it to spit, add the chicken cubes and garlic. Saute for a couple minutes until the chicken is golden with a little bit of crisp on each side.
Lower the heat and add the peppers and tomatoes. If your tomatoes are as ripe as they should be, I'd add them whole so you don't lose the juice on a cutting board. Smash the tomatoes with the side of a wooden spoon in the pan. Cook over low heat until peppers are the desired consistency. Add a little bit of white wine (probably a tablespoon or two) and cook for another minute. Serve.
Notes: This is definitely a comfort food dish for me. I think it's cool how the olive oil and the tomatoes form an orange sauce on the chicken. I have to ask my mom what cut of chicken she used because growing because I remember there being bones on the chicken. I just used a chicken breast because that's what I have stocked up in my freezer. I added mushrooms because I had a couple leftover from my stuffing last week.
