Cucumber Salad

This recipe reminds me of my grandfather more than any other food so Michael and I have a special love for it and Michael has a not so small obsession with red wine vinegar. I googled to see if there was a real name for this recipe but there is not. Rachel Ray even has a version of the world's simplest recipe (besides garlic and oil on any vegetable) that has a 5 star average rating. 
It's also something I can make and eat while everything else is cooking. I usually don't start cooking until 9 and would like to not be starving when I eat my main course. 


Ingredients:
1/2 cucumber cut into half circles
1/4 onion sliced thinly
salt
olive oil
red vinegar to taste






Mix all of the ingredients together and eat? My family usually covers the cucumbers and onions in red wine, drizzles a little olive oil, and sprinkles salt on top.  


Or Rachel Ray's more professional recipe:
1/4 red onion, peeled, halved lengthwise, and thinly sliced
1 Kirby cucumber, halved lengthwise and thinly sliced
  • A generous drizzle of extra-virgin olive oil, about 2 tablespoons2 splashes red wine vinegar
  • Coarse salt and black pepper
Dress the onions and cucumber with olive oil, red wine vinegar, salt, and pepper.
