Fava Bean and Shallot Zucchini Spaghetti

Ingredients:
1 produce bag of fresh fava beans
1 shallot, sliced
2 cloves of garlic, minced
1 zucchini, made into spaghetti
Olive oil

Directions:
Fava beans can be a little tricky but I love them. Growing up my grandma and I always used to peel them together.

How to cook fava beans:
1) Peel fava beans from their shell.
2) Boil salty water. When boiling add fava beans. Cook 3-4 minutes.
3) Place fava beans in an ice bath to stop cooking.
4) Once cool enough to handle, peel fava beans from their skin.

Saute garlic in a fair amount of olive oil in a medium heat skillet, careful not to burn. Add fava beans and saute about 8 minutes. Add zucchini and saute about 2 minutes, until limp but not overcooked. We're going for al dente. Plate. Salt and pepper to taste and serve.
