Ingredients:
3 boneless, skinless chicken breasts1/4 cup coconut oil (or any oil)
½ medium red onion, diced
3-4 garlic cloves minced
½ cup chicken broth
¼ cup coconut aminos
¼ cup apple cider vinegar
Lots of black pepper
In a large skillet heat the coconut oil over medium to medium high heat.
Once the oil is nice and hot, place the chicken into the oil. Cook on each side for about 2 minutes. Remove the chicken.
To the hot pan, add the onion and stir until transculent. Add garlic and wait about 30 seconds. Add the liquids and black pepper. Bring to a simmer and add chicken. Cook about 10 minutes each side.
Remove chicken, turn up heat, and let reduce. Serve on top of chicken.
Notes:
This was good. Definitely a complete switch from the flavors of my usual grilled chicken.
