Cinnamon Crusted Pork Chops with Apples and Sage

Ingredients:
3 center cut pork loin chops (I think that's what they're called)
1 Tbs fresh sage, chopped
2 apples, chopped (I used gala. They were on sale)
2 onions or shallots, chopped
White wine
Cinnamon
Salt and pepper

Directions:
Heat olive oil in a pan and add your apples, onions, and sage. Cook until the apples start to look a little brown, which is about 5 minutes.

While they're cooking season your pork chops with a GENEROUS amount of cinnamon and a little salt and pepper. Mine were fairly coated and the cinnamon wasn't strong at all.

Empty the pan on a plate and add pork chops. Sear for 2 minutes on each side. Add about 1/4 c white wine. Allow chops to boil, reduce to medium heat, and add your apples and onions mixtures back into the pan.

Cover, turn down heat, and cook for about 10 minutes. Mine were fairly thick chops.
