Tomatillos were on sale so I decided to pull out the salsa verde recipe again and see what I could do with it. My measurements of ingredients are probably off but that's ballpark. Add as much salsa or chicken as you'd like.
Ingredients:
1 zucchini, julienned
1/2 cup Salsa Verde
1 pint cherry tomatoes
1 cup shredded chicken
Olive oil
Cumin
Fresh cilantro
Chili Pepper
Salt
Directions:
I used the toaster oven so I didn't have to wait for the oven to preheat. Toss the tomatoes with a little olive oil and some spices. Bake at 375 for about 20 minutes (or until the rest of the meal is put together)
Julienne zucchini and saute with a little olive oil for a couple minutes. Until zucchini is heated through. Plate. Add shredded chicken and salsa verde. Add roasted tomatoes.
Notes:
Zucchini cooks down so I'd probable do a zucchini per person for this recipe.
