Stuffed Poblano Peppers

I'm trying to get rid of everything in my fridge before I leave for London so I put together this recipe last night and this morning so I could eat it for lunch. I am aware that it is insane that I'd rather be cooking quinoa and roasting peppers at 11 pm than letting said peppers go bad, but that's just how it is. If I was in my apt for more than 1 hour a day, I probably wouldnt have had to make this recipe over 3 days.

Ingredients:
4 poblano peppers
1/2 cup quinoa
1 cup water
1/2 onion, chopped
1 chicken breast shredded
1/2 jar of salsa
Olive oil
Jack cheddar cheese (about 1/2 cup)
Seasonings: cumin, cilantro, chili pepper, salt, pepper,

Directions:
Day 1: Preheat oven to 375 degrees. Rub peppers with olive oil and place peppers on a baking  sheet in the oven. Roast for about 40 minutes (rotating halfway through) until peppers start to blacken. Remove from oven and let cool for about 15-20 minutes in a sealed container. Remove skin. Slice an opening in the pepper and with the dull side of a knife, remove ribs and seeds.

Day 2: Cook quinoa per directions on packaging. I also added a little bit of each of the seasonings so the quinoa would have some flavor. As quinoa is cooking, saute some onions. Also season with some of the seasonings.
Once quinoa is done cooking, add in onions, shredded cooked chicken breast, and 1/2 jar of salsa. Spoon a little bit of salsa on the bottom of the baking pan. I find sometimes the bottoms of these meals gets burnt and harder to clean so I always put some liquid on the bottom of the container.
Fill peppers with quinoa mixture. Sprinkle some jack cheddar cheese.

Day 3: Preheat oven to 350 degrees. Bake for about 20 minutes or until cheese is melted and top layer of quinoa is a little crunchy.


Notes: I was going to use riced cauliflower instead of quinoa but day 2 was done after I got home from soccer at 11 pm last night so I didnt want to wake the roommates if the food processor was loud. I can't remember if it's loud or not.
Day 3 was at 8 am this morning as I was showering and getting ready for work.
