Quick Dinner for 1

This isn't very exciting, but it was so easy and pretty healthy -- and easy to make for one person.


Ingredients:
1/2 cup brown rice (1 cup cooked of some kind of grain), cooked with a little oil
Frozen greens -- I used collards last night
2 poached eggs (this helped: http://smittenkitchen.com/blog/2008/08/how-to-poach-an-egg-smitten-kitchen-style/)

Combine the brown rice and greens.  Put the eggs on top.  Voila.
