1 cauliflower, shredded
1/2 yellow onion, diced

1 yellow pepper, diced
2 Tbs olive oil
2 garlic cloves, minced
1/2 c vegetable broth (I had chicken in the fridge so that's what I used)
4 oz tomato paste
3 oz dark chocolate, chopped
1 tsp cumin
1/2 tsp oregano
1/4 tsp red pepper flakes
salt and pepper
Directions:
Use a skillet with a lid. Heat it with olive oil and add onions, tomatoes, peppers, and garlic and saute for a couple minutes. Once the onions have begun to brown, add the cauliflower and cook for a couple minutes. Add vegetable broth and cover. Cook for 5 minutes. While that's cooking down, melt the chocolate and stir in tomato paste and spices. Add to cauliflower and cook 5-8 minutes until it looks like it's thickening.
